I am back with cheese popovers! I used to make these with my sister during our summer vacations. We had a lot of fun trying out different types of bread recipes. This was one of them. So popovers are a kind of hollow bread that taste amazing when they are right out of the oven. They are great for an afternoon tea in a snowy day! Now, the recipe:
For the batter you will need:
- 1 cup flour
- 1 cup milk
- 1 Tbsp melted butter
- 1/4 tsp salt
- 2 eggs
For the cheese filling you need:
- 2/3 cup parmesan cheese
- paprika, black pepper, garlic powder to taste (optional)
Mix the first 4 ingredients for the batter with a beater until it is homogeneous.
Add one egg at a time, but don't beat it too much, it should be a light batter. Grease a mini muffin baking sheet with oil.
Sprinkle some parmesan cheese (seasoned with paprika, black pepper, garlic powder, anything you like!) in the muffin pan and shake it up a bit so that the parmesan coats it nicely.
Next, fill each muffin cup with one spoons of batter so it fills 1/3 of the cup.
Then add a few spoons of the parmesan cheese mixture
And fill it again with batter until it is 2/3 filled. Bake in the oven at 450 F for 10 minutes, then lower the oven to 350 F for another 5 mins. And this is what you get!!
I got 24 mini popovers and 2 regular sized ones. They don't taste as well if you reheat it later, best is to eat it on the spot!

ReplyDeleteHi Cristina, no this recipe doesn't take baking soda or baking powder, it's a very liquid batter. I guess that it is the eggs that make them grow.
