Cheese Balls Recipe

Today I will share with you this easy recipe, which I do over and over again whenever we have a gathering here at home. I usually serve it as an appetizer, but it would also work great as a brunch item. So, if you need some inspiration for your New Year celebration, you can give this a try... it's a crowd pleaser for sure.

You will need:

  • 1 1/2 cup grated cheese (any kind, I used parmesan)
  • 1 1/4 cup flour
  • 1 stick of butter (4 oz = 113g) at room temperature
  • 1 egg (yolk and white separated)
  • Mixer

 1) Put all the ingredients, except the egg white in a bowl and use your mixer until you get a "sand-like" consistency. (Remember my previous post with the Christmas cookie recipe? Well, this is very similar as you can see in the picture)

2) Knead the dough and try to keep it to one side of the bowl. This dough is a little flaky, so you won't be able to make one big ball out of it. Instead you will be making small balls, by pressing it in your hands. A word of warning, this part is a little time consuming... but your efforts will be rewarded!

 3) Use a fork to beat the egg white a little, just enough to make it a little less gooey. Coat each ball with the egg white and place in a greased cookie sheet.

4) Pre-heat the oven to 300 F and bake for 20 - 25 minutes till they are golden brown.

This recipe makes about 30 cheese balls.

It is also freezer-friendly which it great, especially if you are having a large gathering and want to make things ahead of time. Just wait till it cools down and freeze them in a baking sheet. Once they are frozen you can transfer them to a ziploc bag, label, date it and you are good to go! It tastes just as wonderful for up to 2 months. When you are ready to serve, just pop them in the oven and bake till they are heated through.

Enjoy!
